Green Tea is light, delicate and has a gentle flavor that lends itself well to enhancement of taste and aroma through the addition of flavors and spices. Green teas, when brewed properly, have less caffeine then all other types of tea.
There are three methods of processing green tea: oven-fired, pan-fried or the Japanese method of steaming. These methods will completely stop the oxidization process, preserving color and preventing loss of polyphenols. Polyphenols are compounds in tealeaves that are natural plant antioxidants. Antioxidants have been shown to prevent damage caused by free radicals to DNA and other molecules. Green teas contain 30-40% polyphenols or about 50 to 150 mgs per cup.
Green tea is low in caffeine but high in vitamins including vitamin C, water-soluble B vitamins and minerals.

Preparation: Quick microwave heating of the water for 2 minutes and 30 seconds at a high level should be just about perfect for a medium cup size. Add t-sac and 2 grams tea for approximately 2 minutes for a pleasing amber or light green brew, depending on variety. (Heat water to 180 degrees F, brew for 2 min.)
