Preparation: Quick microwave heating of the water for 2 minutes and 30 seconds at a high level should be just about perfect for a medium cup size. Add t-sac and 2 grams tea for approximately 2 minutes for a pleasing amber or light green brew, depending on variety.
(Heat water to 180 degrees F, brew for 2 min.)
Зеленый чай СенчаSencha tea, or Tea-Sencha, originated in Japan but today Sencha is produced in China as well and sold to a demanding Japanese market. The scent of this tea has been described as 'grassy' or 'fresh hay' and 'ocean breezes'. Its brightly colored leaves are needle-shaped and rolled tightly to protect the distinctive flavor. The most popular in Japan, Sencha tea literally translated means "common tea" proving that what may be common for one man is connoisseur for another.
There are three methods of processing: oven-fired, pan-fried or steamed. One of these methods completed immediately after harvesting will completely stop the oxidization process, preserving both color and polyphenols. Polyphenols are compounds in the tealeaves that are natural plant antioxidants. Antioxidants have been shown to prevent damage caused by free radicals to DNA and other molecules. Green teas contain 30-40% polyphenols or about 50 to 150 mgs per cup. Green tea is low in caffeine but high in vitamins including vitamin C, water-soluble B vitamins and minerals.
One cup of green tea contains:
1 - 2% daily value of riboflavin, folic acid, pantothenic acid and niacin.
5% daily value of Potassium
4.5% daily value of Manganese
0.1mg Fluoride
45% daily value of Magnesium

Черный чайTea obtains its blackness through a fermentation process, which results in complete oxidation of the leaf prior to being fired. This process greatly reduces the polyphenol content of the tea but allows for a fuller, richer taste. Flavor, briskness and strength are the properties by which this tea is judged.
Preparation: A tea grader in India will prepare a black tea by poring boiling water over the leaf and allowing it to steep for a period of 4 to 5 minutes - being careful not to over brew, which may cause bitterness. The drinker should be careful to allow the tea to cool properly prior to consumption as drinking extremely warm brews has been linked to cancer of the throat.
Чай оолонгOolong teas present the best of both tea worlds in one brew. These teas are not quite black and not quite green, but a masterful mix of artisans' curing techniques. Gently rolling after harvest allows the oils in the leaves to oxidize slowly. The artisan may stop the process at any chosen time to achieve a complex range of tastes - sweet, aromatic, bracing, fruity and fragrant.
Preparation: Water should be at a temperature slightly less than boiling, and brewed for 3 to 6 minutes according to taste.
Белый чайWhite Teas are made from the earliest picked leaf buds of the youngest shoots. They are the least processed, least oxidized, and are gently cared for by hand picking and air-drying. Thus it makes perfect sense that this tea has less caffeine and is high in antioxidants.
Preparation: Due to the delicate nature of this tea, the water temperature should be considerably less than boiling, and the tea steeped for 4 to 5 minutes.
